Céline et Yvan ZEYSSOLFF
inemaker in Gertwiller since 1778, the tradition of vines and wine is passed down from father to son for 11 generations to the Maison ZEYSSOLFF. The Klevener de Heiligenstein production area covers 90 ha but only 51 ha are planted with this variety. Between 200 and 325 m above sea level, this terroir is oriented on a gentle slope below the village of Heiligenstein. It is made up of rich loamy clay soils. Deep land sheltered from drought in years with low rainfall; letting the roots of the vine explore the soil in search of the trace elements that contribute to the complexity of the wines.
A non-aromatic selection of Gewurztraminer, it is a grape variety (savagnin rose) which is only grown on the Ban d’Heiligenstein and a few neighboring villages including Gertwiller. Visually very similar to Gewurztraminer, its clusters are more winged and fuller.
Pale yellow colour, shiny and limpid. Subtle nose with beautiful, slightly spicy floral notes. A slight bitterness on the finish characterizes this variety.
The Klevener de Heiligenstein is a very pleasant wine whose finesse goes well with terrines, white meats, tartes flambées as well as fish accompanied by a cream sauce…
